Couscous! First up was Lemony Garlic Mushrooms on a Bed of Couscous. It was very tasty, although the sauce never really thickened as much as I was expecting it to. The taste was still good, though – and good as cold leftovers the next day.
Next, we had Squash Stuffed with Cherry Apple Almond Couscous which was very tasty! I lost my Granny Smith apple somewhere in the depths of the fridge so I just used a Gala apple that I came across and it was still very good. I was a little worried that it would be too sweet, but even though there are a lot of kinds of sweetness in this dish (from the acorn squash, the dried cherries, and the apple), it all works and is cut a little bit with the honey dijon mustard dressing. At any rate, a successful dinner and also quick and easy to make!
